By downloading or using the app, these terms will automatically apply – make sure that you read them carefully before using the app. You’re not allowed to copy or modify the app, any part of the app, or our trademarks in any way. You’re not allowed to attempt to extract the source code of the app, and you also shouldn’t try to translate the app into other languages or make derivative versions. The app itself, and every trademark, copyright, database right, and other intellectual property right related to it, still belong to Discover Campania.
Discover Campania is committed to ensure that the app is as useful and efficient as possible. For that reason, we reserve the right to make changes to the app or to charge for its services, at any time and for any reason. We will never charge you for the app or its services without making very clear exactly what you’re paying for.
This app stores and processes the personal data that you have provided to us, to provide our Service. It’s your responsibility to keep your phone and access to the app secure. We therefore recommend that you do not jailbreak or root your phone, which is the process of removing software restrictions and limitations imposed by the official operating system of your device. It could make your phone vulnerable to malware/viruses/malicious programs, compromising your phone’s security features and it could make the app not working properly or at all.

You should be aware that there are certain things that Discover Campania will not take responsibility for. Certain functions will require the app to have an active internet connection. The connection can be Wi-Fi or provided by your mobile network provider, but Discover Campania cannot take responsibility for the app not working at full functionality if you don’t have access to Wi-Fi, and you don’t have any of your data allowance left.
If you’re using the app outside of an area with Wi-Fi, you should remember that the terms of the agreement with your mobile network provider will still apply. As a result, you may be charged by your mobile provider for the cost of data for the duration of the connection while accessing the app, or other third-party charges. In using the app, you’re accepting responsibility for any such charges, including roaming data charges if you use the app outside of your home territory (i.e. region or country) without turning off data roaming. If you are not the bill payer for the device on which you’re using the app, please be aware that we assume that you have received permission from the bill payer for using the app.

Discover Campania accepts no liability for any loss, direct or indirect, you experience as a result of relying wholly on this functionality of the app.
At some point, we may wish to update the app. The app is currently available on Android, iOS & KaiOS – the requirements for the system(and for any additional systems we decide to extend the availability of the app to) may change, and you’ll need to download the updates if you want to keep using the app. Discover Campania does not assure that it will always update the app so that it is relevant to you and/or works with the Android, iOS & KaiOS version that you have installed on your device. However, you agree to always accept updates to the application when offered to you, We may also wish to stop providing the app, and may terminate use of it at any time without giving notice of termination to you. Unless we tell you otherwise, upon any termination, (a) the rights and licenses granted to you in these terms will end; (b) you must stop using the app, and (if needed) delete it from your device.

L’olfatto fa da guida sicura attraverso la piccola corte, che accoglie con il rosso vivace dei gerani affacciati dalle finestre quadrate. La traccia odorosa e la curiosità che l’accompagna conducono a una porta laterale, appena socchiusa. L’aroma lì si avverte più forte. Un richiamo, imperioso perfino, a varcare la soglia, per identificarne l’origine e, soprattutto, la natura. Il primo colpo d’occhio all’interno non lascia più dubbi: su uno scaffale metallico sono allineate delle invitanti formaggette dalla colorazione giallastra, di sfumature di diverse, evidentemente per differenti livelli di stagionatura. Qualcuna è puntellata di rosso. Piccante dunque, oltre che saporita. Considerato che sono a Vitulano, non può che trattarsi del formaggio pecorino per cui, tra l’altro, è rinomato questo antico borgo tra i monti della Dormiente del Sannio..
Due casari, con gesti misurati e sicuri, stanno finendo di riempire le fuscelle con la ricotta appena lavorata. E’ ancora calda, come sarebbe impossibile gustarla altrove. Morbida, bianca, l’invito a provarla parte ancora prima delle presentazioni ed è francamente irresistibile. Dopo l’olfatto e la vista, anche il gusto trova la sua soddisfazione in questo piccolo caseificio a conduzione familiare, dove Antonio e la moglie trasformano il latte che arriva due volte al giorno dai pascoli di montagna.
Lassù ci sono gli altri componenti della famiglia Calabrese, che si occupano delle seicento pecore dell’azienda. In gran parte di razza bagnolese, autoctona della Campania e ottima produttrice di latte. Di questi tempi, con il caldo estivo, il gregge è stato trasferito sulle colline beneventane, ad una quota più alta, secondo i ritmi millenari della transumanza che da queste parti si rinnovano inesorabilmente due volte all’anno. E’ la natura a dettare le regole degli spostamenti da un pascolo all’altro e della produzione a valle. Le pecore danno più latte in primavera e in autunno e sui diversi quantitativi stagionali è adattata l’attività del caseificio. Di sicuro e imperdibile c’è il doppio appuntamento quotidiano, al mattino e alla sera, che mobilita l’intera famiglia: gli allevatori tra i prati per la mungitura e i casari in paese per la trasformazione in formaggi e ricotta.
Il latte, dovunque si trovi il gregge sulle alture circostanti, arriva a Vitulano appena munto.
E porta dentro di sé gli innumerevoli profumi e sapori delle erbe brucate in libertà, che cambiano anch’essi a seconda delle stagioni. Così, anche se i gesti che accompagnano le varie fasi della caseificazione sono sempre gli stessi dall’inizio della storia dell’uomo, ogni formaggetta composta a mano nel piccolo laboratorio del paese ha qualcosa di unico. Per il latte, certo, ma anche per il caglio, rigorosamente naturale, che ne condivide la provenienza. E poi c’è la stagionatura, all’aria che circola liberamente dentro il laboratorio. Fresco anche d’estate, tra le protettive mura spesse di pietra che fanno schermo al sole.
Ci vogliono almeno cinque mesi di riposo, prima di poter gustare un pecorino vitulanese. La stagionatura può arrivare fino a un anno e sullo scaffale ci sono forme di tutte le generazioni per una intera gamma di sfumature, dal bianco crema delle giovanissime al marrone chiaro delle più “riposate”. Formaggi che raccontano di erba fresca e di saperi antichi. Di pascoli selvatici, tra le rocce chiare dell’accogliente terra sannita.
